Ingredients for 6 people

Recipe

→ a duck breast weighing 450 to 500 grams

→ 4 slices of mozzarella

→ Fresh basil

→ 4 or 5 slices of smoked ham or 4 slices of smoked duck breast

→ Shallots

→ Prunes

→ French fries cooked in duck fat

Cut the duck breast lengthwise into three sections like a wallet.

Spread the mozzarella slices and fresh basil leaves in the center. Add the slices of smoked ham or smoked duck breast.

Season with salt and pepper the inside and roll to form a roast, tie with string, and season the outside with salt and pepper.

Sauté and degrease in a pan for 7 to 8 minutes, sprinkling regularly.

Remove the duck breast roast and bake for 5 minutes at 220 degrees maximum; it should pink inside.

Sauté a few shallots and prunes in the juice left in the pan.

Serve with shallots and prunes, 2 or 3 basil leaves, accompanied by potatoes fried in duck fat and a Buzet Baron d'Ardeuil.
